Our cask-matured Welsh vinegar is designed for culinary and cocktail use, bringing complexity and depth of flavour to your dishes and drinks.
When the COVID-19 pandemic hit the UK and lockdown kicked in, we were stuck with 3,000 litres of cask beer and no pubs to sell to. We reached out to Alex and the team at In The Welsh Wind Distillery and came up with the idea of creating a cask-matured vinegar from this beer.

Reaching out to Orkney Craft Vinegar for their help and support, and some of their exclusive ‘mother’, and to Penderyn Distillery for Welsh whisky casks, we saved the beer and created this delicious low acidity vinegar. Welsh beer, fermented in Welsh whisky casks, here in West Wales, helped along with an injection of Orcadian ‘mother’ and guidance from the Orkney Vinegar Company, this low acidity vinegar is a true Celtic collaboration.

Beyond a classic beer malt vinegar, the liquid shows evidence of the sweet whisky cask that began its life in US Bourbon country. Its colour demonstrates not only its session beer origins but shines as a golden spirit derived from a heavily charred cask.

To taste, relish in candied citrus peel, oatcakes and a gentle, yet moreish acidity, allowing uses in both the kitchen and your cocktail glass.
